Easy Sunday Rice

A great snack or meal for any weight loss diet, just select your portion size. It's easy to make and can be stored and taken anywhere.

Weight loss – snack / Dinner


 














Ingredients:


·         1 Tin kidney beans / red peas


·         750ml (25fl oz) water


·         100g (3 ½ oz) frozen mixed vegetable


·         2 sprigs fresh thyme


·         20g (1/2 oz) coconut cream


·         1 Bay leaf


·         1 Spring onion


·         1 Tsp cumin powder


·         1 Clove garlic, finely chopped


·         ½ Tsp all – purpose seasoning


·         1 Red pepper, deseeded and diced


·         200g (7oz) basmati rice, uncooked


Method


1.       Put the beans in a large non-stick pan with a tight fitting lid and add water. Add all other ingredients except rice and bring to the boil.


2.       Rinse rice in warm water before adding to pan and stir well.


3.       Cover pan and simmer for a further 20-30 minutes or until all liquid has been absorbed and rice is cooked. You may need to add more liquid to soften rice.
