Creamy tuna melt

6 servings – weight gain – Breakfast / Dinner


Try this recipe for a low fat, high protein stacked meal. Don’t starve your taste buds or muscle.

 

Ingredients:


  • 2 celery sticks, diced

  • 1 small onion, chopped

  • 12 oz / 340g can white tuna

  • 1 1/2 cups low-fat cottage cheese

  • 1/2 cup reduced-fat mayonnaise

  • 1 tablespoon lemon juice

  • 1/4 teaspoon garlic powder

  • 3 breakfast muffins

  • 1 cup grated, Cheddar cheese


Directions:


  1. Spray a large non-stick skillet / pan with cooking oil and place it over medium heat.

  2. Add the celery and onion to the pan. Cook until the onion is tender / soft.

  3. Drain the tuna and add it to the pan along with the cottage cheese, mayonnaise, lemon juice, and garlic powder. Cook just long enough to warm the ingredients, 2 - 3 minutes, stirring frequently (If you like a little crunch in your muffins, toast them now while the tuna mixture is warming up).

  4. Remove the pan from the heat and set aside.

  5. Spray a glass baking dish (large enough for the mixture) with cooking oil spray. Split the breakfast muffins in half and place them, split side up, side by side in the baking dish.

  6. Spread the tuna mixture evenly over the muffins and sprinkle with the cheese. Heat until the cheese melts, 2 - 3 minutes.
