Broccoli and broad bean soup

This is a healthy soup that uses only a few ingredients. Straight forward to prepare, it's a great meal to help alkali your body and stay healthy.



Weight loss - Serves 4 - Snack



Ingredients:



4 Tbsp extra virgin olive oil

3 slices pancetta or bacon, finely chopped

2 Shallots, finely chopped

500g (1lb 2oz) potatoes, roughly chopped

150g (5 1/2 oz) fresh, or frozen broad beans

200g (7oz) broccoli, cut into florets

Handful of fresh parsley, finely chopped, plus extra for garnish

1 1/2 litres (2 3/4 pints) hot vegetable stock

60g (2 1/4 oz) Parmesan cheese, freshly grated

Salt and pepper



Preperation:



Heat the olive oil in a saucepan and saute the pancetta or bacon and shallots.

After a few minutes, add the the vegetables and parsley and stir well.

Finally, pour in the stock and simmer for 35 mins.

Remove from the heat and whizz in a blender until smooth.

If the soup is a little too thick, add some more hot vegetable stock.

Stir in the parmesan, season and place back on the stove on a low heat to warm through.

Garnish with parsley and serve immediately with toasted crostini, if desired.
