Blueberry Loaf

Weight loss - Desert - 8 slices


Treat yourself to a desert without feeling guilty. Keep them pounds dropping off with this low fat, low calorie alternate.


Cooking time: 30-40min


Nutritional Info: 120 Cals and 2g Fat, per slice


Ingredients:


1x375g packet blueberry muffin mix

1 medium egg

120 ml (4fl oz) milk

Demerara sugar, for sprinkling

Fresh blueberries and creme fraiche, to serve

Mint sprigs, to garnish


Preperation:



  1. Preheat oven to 180C (350F, Gas 4). Line and grease a 450g (1lb) loaf tin.

  2. Make up a muffin mixture according to packet instructions, using egg and milk.

  3. Poor into laf tin and smooth over. Sprinkle with the sugar.

  4. Bake for for 25-30 minutes, or until a skewer inserted into the middle of the cake comes out clean.

  5. Leave to cool for a few minutes and then turn out onto a wire rack.

  6. Serve warm or cold with the bluberries, creme fresh and sprigs of fresh mint, if you like.
